Classic Lentil Soup

A traditional lentil soup that can be enjoyed year round and is hearty enough to serve as a meal on it's own. Lentil soup not only has a hearty dose of plant based protein, but is also full of other veggies to help you get your daily dose. Bake your own Shami bread into croutons instead of frying for a healthier bit of crunch.



3 cups Red lentils, washed and drained

1 1/2 cups Onion

2 Medium tomatoes

2 1/2 cups Carrot

6 Large cloves of garlic

10 cups Chicken or vegetable stock

3 tbsp Butter

1 tbsp Cumin

Salt and pepper to taste

Fried or baked Shami bread


Roughly chop onion, tomatoes, carrot and garlic.

Place all your ingredients except the butter and cumin in a large pot.

Bring to a boil over high heat then reduce the heat to medium/low and let simmer semi – covered for about 30-40 minutes until all the vegetables are soft.

Turn off the heat; with an immersion blender or in a regular blender, blend the soup until smooth.

Return the pot back to the stove on low heat.

In a small pan, over medium heat, place the butter and cumin. Keep stirring for 1-2 minutes until the butter melts and the whole mixture takes on a darker color.

Pour the butter and cumin mixture over the soup and stir well.

Bring the soup to a boil. Season with salt and pepper to taste. Serve hot with fried pita croutons (Shami bread) on top.


In case you don’t have stock, you can cook it with water only and it will still taste delicious, or you can use 10 cups of water and 1 stock cube.

Place the lid on the pot and cover only 3/4; leaving a 1/4 open.

For a lighter option, instead of frying the croutons, you can toss them with 1 or 2 tbsp olive oil and roast in the oven at 200C tossing the croutons half way through to make sure it roasts equally.

This recipe can easily be halved or doubled.
