Delicious Beetroot Soup

Winter calls for a change in diet.. This is why during this time of the year, we find ourselves drawn to "comfort foods" more than ever; yet, we don't know what to eat. Going for a nice warm soup can never be wrong in such weather.

One of the vegetables we love most, for its fascinating benefits, deeply warm color as well as its sweetly earthy taste is Beetroots.

Ingredients

500 g Beetroot Heads (Cubed)

2 tbsp Olive Oil (Divided)

1 count Red Onion (Chopped)

1 Stalk of Celery (Chopped)

750 ml Vegetable Stock

2 tbsp Fresh Dill (Chopped)

Salt and Pepper (To Taste)

Garnish

Dill Stalks

Yogurt or Dairy Free Yogurt

Directions

1. Place Beetroot Cubes on an Oven Tray, drizzle with Olive Oil. Preheat Oven to 200C and roast for 30mins (or until they darken)

2. In a Large Pan, heat up the other Olive Oil tablespoon, add Onion and Celery - Cook, stirring often for 5 minutes, till fragrant.

3. Add Roasted Beets, stock/broth and season with salt and pepper. Bring to a boil, then reduce the heat and simmer for 5 minutes.

4. Add the Chopped Dill and puree the soup with a hand blender.

Serve in Bowls with a Drizzle of Yogurt and Sprinkling of Dill.
