Freekeh with Vegetables

Freekeh is an Egyptian "superfood" - a great replacement for white rice, excellent as a meal all on its own or as a tasty side.

2 cup Freekeh

1 count Onion, 1/4 inch diced

2 count Garlic cloves, peeled and minced

1 count Bell Pepper, diced

1/2 kg Carrots, diced

1 count Tomato, juiced

pinch Salt

pinch pepper

pinch Cumin

2 tbsp Olive Oil


Start by washing the freekeh, rinsing 3-4 times until water is clear.

Soak freekeh in water for 60 minutes, then drain the water.

Preheat oven to 210 degrees Celsius.

Add the rest of ingredients to the freekeh and mix together.

Place in a clay bram in the oven for 20 minutes.

Remove the freekeh from the oven and add vegetable or chicken broth to the clay bram. Place back in the oven for another 30 minutes.
