Frozen Blueberries Ice-Cream

It’s time for making some delicious Ice Cream! 🍦🫐⁣

This is our first Ice-Cream recipe this year and we chose Blueberries Ice-Cream because Blueberries are incredibly tasty, full of nutrients (especially when frozen), and their color is sooo beautiful. ⁣

3 cups Fresh or Frozen Blueberries

1/2 count Lemon, Juiced

2/3 cup Sugar

1 tbsp Water

14 oz. Full-Fat Coconut Milk Can

14 oz. Coconut Cream


In a medium saucepan, cook the berries, lemon juice, sugar, and water over medium heat until boiling. Let boil for 3-5 minutes, stirring often, until berries begin to burst and sauce is deep purple in color. Set aside and let cool for a few minutes.

* Combine coconut milk, coconut cream, cooled blueberry mixture in a blender and blend on high speed until fully combined and smooth. Just keep blending until you get a smooth mixture.

Chill the blended mixture in the fridge until cold - around 30 minutes. Process cold mixture in your ice cream maker according to the manufacturer's instructions. Pour into a loaf pan or other container and freeze for at least 4 hours before scooping!

Leave ice cream out on the counter for 15-20 minutes to soften before serving.
