Orange Cake

A light, vegan cake to start off the warm weather season, this simple recipe will have your friends and family asking for more. A bit of flour and some oranges are the essentials that make up this zesty treat.



1 cup Wholewheat flour, sifted

1/2 cup White flour, sifted

2 tbsp Cornstarch

1 tsp Baking powder

1 tsp Baking soda

1/2 cup Powdered sugar

1/4 cup Vegetable oil

1 tsp Vanilla extract

1 tsp Orange extract

1 cup Orange juice, fresh

1 Orange zest

1 pinch Salt

Flax eggs


Preheat the oven to 180 degrees C.

Prepare the flax eggs ( 2 tbsp flax seed with 6 tbsp water, stir and refrigerate for 15 minutes).

In a large bowl, combine together the flours, baking powder, baking soda, cornstarch, powdered sugar, salt and orange zest.

In another bowl add the orange juice, oil, vanilla extract, orange extract and the flax eggs. Whisk together.

Make a well in the dry ingredients bowl. Start to slowly pour the wet ingredients in, then whisk together just until blended.

Grease a medium baking pan, add the batter, add fresh oranges slices and bake for 30-35 minutes, or until golden. Test with a toothpick until it comes out clean.

Let cool for 15 minutes and enjoy!
