Mediterranean Quinoa Chickpea Salad

This salad has just the right amount of fresh vegetables mixed with quinoa, chickpeas, and cumin and topped with a lemon vinaigrette dressing. It makes a delicious side dish to any meal or healthy mid-day lunch during the week.

1/4 cup Cooked Qunioa

1/4 cup Cooked Chickpeas

1/2 count Ripe Avocado

1/4 count Red Bell Pepper

1 count Tomato

1/2 count Red Onion

1/2 count Lettuce Head


2 tbsp Vinegar

1 count Lemon

1 count Minced Garlic clove

1/2 tsp Cumin

2 tbsp Extra Virgin Olive Oil


Top lettuce with quinoa, red peppers, chickpeas, tomatoes, red onions, and avocado.

In a salad dressing container or small mixing bowl whisk together the dressing ingredients.

Pour dressing over the salad and mix to coat the salad.
