Roasted Pumpkin and Sweet Potato Soup

Heartwarming, Tasteful and Super Nutritious Pumpkin Soup that you can eat any time of the day or whenever comforting is needed.

It's one of the best meals to have in your kitchen in Autumn.

900 g Pumpkin, Cubed

2 count Sweet Potatoes, Cubed

3 count Celery Stalks, Chopped

1 count Onion, Diced

6 count Garlic Cloves

1 tbsp Cumin

Cilantro and Sage

1 pinch Salt and Pepper

450 g Coconut Milk (1 Can)

1 cup Veggie Broth (Optional)

Olive Oil


1. Preheat oven to 200 degrees C.

2. In a large bowl, combine all Veggies, Herbs and Seasonings. Drizzle with Olive Oil and toss until everything is evenly coated.

3. Spread the Veggies in a lines large backing sheet, in a single layer.

4. Roast for 1 hour, tossing the Veggies halfway through.

5. Remove from oven and cool for 10 minutes.

6. In a Blender, add Veggies and Coconut Milk and purée until smooth. If the Soup is thick, Slowly add Veggie Broth until you get the desired consistency.

7. Transfer Soup form blender to a pot and preheat on stovetop just before serving.

8. Garnish with Cilantro and Enjoy!
