This salad is anything but boring. Packed with bitter greens, crunchy nuts, sweet apple and a tangy balsamic dressing, it is not only good for you, but also an explosion of textures and flavours! The addition of blue cheese is optional but makes for an even tastier salad. Feel free to mix things up according to your taste - swap the apple for pear, walnuts for almonds or blue cheese for feta!

200 g Rocket and Baby Spinach Leaves

1 count Apple Cut into bite-sized pieces

120 g Walnuts toasted

100 g Blue cheese (optional)


2 tbsp Extra virgin olive oil

1 1/2 tsp Honey

Salt and pepper to taste


In a large bowl, toss the greens with the apple together. Arrange the walnuts and the cheese (if using) on top.

Mix all the ingredients of the dressing together and have a taste. Adjust according to preference. TIP: I like to make my dressings by placing all the ingredients in a small jar and shaking it vigorously to emulsify and mix the ingredients well.

Dress the salad, toss gently and serve immediately. The greens will start to wilt once the dressing is added so make sure to dress just before serving.

If you would like to prepare the salad ahead of time, toss the apple slices with some lemon juice immediately after slicing to prevent them turning brown and store each of the salad components separately in airtight containers until needed. Just toss everything together before serving.
