

Spinach Ricotta Lasagna

Let's face it, cheese is an addiction, a good one though! But we wanted to do something a little different with this recipe. Instead of making a lasagna with ground beef and tomato sauce, we made one with spinach and ricotta using Italiano® Premium Range lasagna sheets. So although this recipe is dangerously cheesy, it's still got a nice helping of greens.

Directions
Boil lasagna sheets with 1 tbs of salt
Drain and rinse lasagne sheets with cold water
Heat 2 tbs olive oil in large pan, add chopped onion and garlic. Sauté until almost golden
Add chopped spinach and stir until wilted
Remove from heat and add ricotta cheese and 2 tbs olive oil, a small amount of heavy cream and spices (salt, pepper & nutmeg)
Grease baking tray with remaining 2 tbs of olive oil
Line baking tray with half the lasagne sheets add spinach-cheese mixture
Add another layer of lasagne sheets
Top with heavy cream, sprinkle mozzarella
