Recipe: Overnight Oats with Strawberry Banana Ice Cream

Dessert? Breakfast? Brunch? Who knows, but if you try this recipe you will agree with us when we say that it's out of this world! A plant based recipe that is so easy to make and is perfect for hot summer days, with overnight oats on the bottom and strawberry banana ice cream on top, you may just think it's time for dessert with this breakfast recipe. To make this recipe an easy process, make sure to prepare the following the night before: Place bananas and strawberries in the freezer and prepare the overnight oats recipe that is listed below.



Overnight oats with chia seeds

1/4 cup Oats

1 tbsp Chia seeds

3/4 cup Coconut milk, almond milk OR Oats milk

1 tsp Raw maple syrup (optional)

Ice cream

1 1/2 Frozen bananas

1/2 cup Frozen strawberries


Overnight oats

The night before, in a bowl or a jar, mix the oats, chia seeds, and milk. Stir well and cover the jar with a lid or the bowl with a plastic wrap. Refrigerate overnight.

Ice Cream

Peel bananas and place them in the freezer for 4-6 hours, or overnight.

Once bananas are completely frozen, place them in a food processor and blend. Occasionally scrape down the sides and continue to blend until smooth.

Add the strawberries and blend again.

Serve immediately over the overnight oats and garnish with your favorite fruits or nuts. Eat immediately.

Always keep bananas in your freezer, so you don't have to wait for the bananas to freeze every time you make this recipe.
