Soulful Pumpkin Soup

This soulful, yet fast and easy soup recipe is perfect for fall. It is thick creamy and heartwarming, feels just like a delicate hug.

1 tbsp Olive Oil

1/2 tsp Garlic Paste

1 count Large Onion

1 kg Pumpkin Cubed

1 cup Cashew Milk

1 cup Vegetable Stock Cube

4 cups Water


In a pan on medium heat, preheat Olive Oil, add Garlic Paste and Chopped Onion.

Stir Galic Paste and Onion until they get amalgamated and become goldish.

Add Pumpkins, Water and Vegetable Stock. (Liquid should not cover all the pumpkins.)

Bring to a boil, uncovered, then reduce heat and let it simmer until Pumpkin is tender.

Blend using an immersion blender or a regular one.
