The Ultimate Grilled Chicken Breast

We are going back to basics with this recipe. If you are on any sort of healthy meal plan chances are grilled chicken breast is something you will be eating day in and day out. Today we’re sharing with you our die-hard, mother’s approved marinade so prepare to say goodbye to tough, chewy chicken and hello to juicy, yummy goodness. What’s more, it’s much easier to prepare than you think.



2 chicken breasts

2 tbsp extra virgin olive oil

1 tbsp balsamic vinegar

2 limes

3 tbsp chopped coriander

1/2 tsp sugar

1/2 tsp salt

1 tsp black pepper


Mix the olive oil, lime zest, lime juice, coriander, sugar, salt and pepper together in a large bowl. Add the chicken and massage the marinade into the chicken. Cover and chill for at least 30 minutes, and up to 4 hours or overnight if you want your chicken extra juicy.

Preheat grill or a pan with ridges to medium high heat.

Remove the chicken breasts from the marinade and pat dry with paper towels.

Add chicken to the heated grill and cook for 5 minutes each side, or until cooked throughout.
