Tortilla Pizza

Super quick to put together, this Tortilla Pizza makes the perfect healthy meal or snack for you
and the kids. Feel free to go wild with toppings – the more colorful the vegetables you choose the
better it is for you!



Wholewheat tortilla


Red onions



Green bell pepper


1/2 cup shredded mozzarella

For the Sauce

1 tsp coconut or olive oil

4 tbsp tomato paste

1 chopped green pepper

2 tbsp minced garlic cloves

1/2 cup chopped red onion

1/2 cup olives

Oregano (to taste)

Basil (to taste)

Salt and pepper (to taste)


For the Sauce:

In a medium skillet, saute garlic, onion, olives, and pepper in oil. Stir in the rest of the ingredients.

Simmer for 5-10 minutes, stirring occasionally.

For the Pizza:

Preheat oven to 190 C. Place the tortilla on a baking sheet and top with sauce, veggies and cheese.

Bake for 10-12 minutes or until cheese is melted.
