

Tumeric Quinoa Recipe

A simple side dish recipe, this new take on quinoa is loaded with beneficial spices for added flavor, along with hints of veggie goodness.
Directions
Heat the olive oil in a saucepan over medium heat.
Stir in the onion and cook until it is softened.
Add the garlic and the saute for 3 more minutes.
Add the turmeric and curry and stir.
Add the water and a generous pinch of salt and pepper and bring to a boil. Stir in the quinoa and let boil again, then reduce heat to low and cover with a lid.
Cook for 10 minutes, then quickly stir in the peas and return the lid to cook for up to 5 more minutes; until the quinoa is tender and has absorbed the water.
Tip: Be sure to rinse your quinoa well with cold water before cooking to remove its waxy outer layer.
