Vegan Brownies
March 13, 2016
These vegan brownies are a great substitute for traditional brownies; anytime, any day! Try not to eat them up before they cool, as their gooey goodness will make them fall to pieces. Added bonus? An average sized piece won't cost you more than 120 calories.
Directions
Prepare the flax eggs and put it in the fridge for 15 minutes ( 2 tbsp flaxseeds + 6 tbsp water)
Combine 1/2 cup of flour with the cup of water and cook over low heat. Stir until the mixture becomes a gluey paste. Remove and let cool.
In a medium bowl mix the sugar, chocolate powder and coconut oil. Mix well then add the flour and water mixture.
Now add the remaining 1 cup of flour, baking soda, baking powder, salt, flax eggs and walnuts and stir constantly until you have a chocolate dough.
If you find that your dough is too think you can add almond milk a tbsp at a time until you have a thick but creamy texture.
Place the mixture onto a parchment paper in a medium pan and bake for 20-25 minutes. Check the center with a toothpick and remove the pan once the toothpick comes out clean.
